Wild Plum Jelly

5 pounds fresh wild plums

4 cups of water to boil wild plums 

5 ½ cups of plum juice from the above combination

1 box of fruit pectin

1 tsp. butter

7 ½ cup of sugar

Prepare canning jars. Rinse plums. Boil plums and water for 30 minutes. Mash boiled fruit. Cool and pour into large cheese cloth lined bowl. Hang fruit in cheese cloth to drain. Mix 5 ½ cups of juice with 1 box of fruit pectin to full boil for 1 minute. Add tsp. of butter to keep foam down. Add 7 ½ cups of sugar and bring to boil on high heat for 1 minute. Pour into sterilized jars. Clean rims and add lids and rings. Return to boiling water bath for 5 minutes. Remove jars and cool. Makes 8 half pint jelly jars.
